I heard my daughter say to my wife "You know how Dad always buys two of everything at the grocery store..." But this yam looks like a winner, one will do.
This reminds me of grilled yam in Taiwan...it's so delicious.
Did you have to change your original receipe plan to cope with one monster yam?
